About	Tetsuya's Restaurant is an art-filled house overlooking a Japanese garden, offering an acclaimed French-Asian tasting menu. It is located in the heart of Sydney, 529 Kent Street. Within the restaurant, chef Tetsuya Wakuda has designed his own on-site test kitchen. This personalised kitchen enables him to create constantly evolving and inspiring dishes. The restaurant offers one of Sydney's most comprehensive wine lists. Tetsuya's Restaurant serves a degustation menu which is prepared by using natural seasonal flavours and fresh ingredients. Each dish is meticulously balanced, from thinly sliced kingfish folded over itself against shiso and lightly pickled daikon to NSW-truffle topped Patagonian toothfish with cannellini beans & dashi broth. They have been making the truffle butter for twenty years. Tetsuya's famous dish is confit Tasmanian ocean trout with its salt-crusted edge.
